I made this for dinner tonight I was short on time and needed to use our Mangos. All the children except my four year old enjoyed it. Served with a sweet poppyseed dressing. The children are keeping me busy and the new baby kept me sick for a few weeks but I think I have my energy back and will try to keep up with my blog better. I am sorry for not updating as I should have. I hope everyone has a good night.
Lots of interesting events happening. I sent in my teaching material and still baking when I can. Today I made bananna nut bread. I strayed from my normal recipe and I hope it is a good outcome.
With every new day I am starting to understand how large families operate. Two new good tips I picked up from my sister were: one- Children are either outside or helping with house work. That has saved me a lot of time and cleaning. two- Making one batch of any type of food is pointless. I will start making two or more of everything. My garden is not doing well because of the cold weather. Next year I will wait until June to actually plant my garden. Or I will prepare much better for the frost.
Today, I need to get clothes ready for church and entertain the children. Hair needs cut, laundry washed, clothes bought, children washed, and at some point give them food. It is another wonderful day full of work to get done for the next week. Last night we had pizza and Brian and David got back from their emergency trip to Colorado. I will start dinner sooner than later today and get the laundry done right away then I will try to entertain the children for the rest of the time.
I have been working on a month menu. Sounds easier than it is. It is a actually a list of 31 meals that my children and both parents can stand to eat. Everything is made at home with the exception of the friday night frozen pizza ritual. I am cooking as we speak and so my hope is to make this a nice dinner. My four year old son likes to pretend to hate everything we eat. So, if it passes the four year old test it usually stays on the list. I do admit, that I don’t put anything green on his plate in fear I may not get to eat that dinner again. Just being funny; but I do try to hide onions. My husband would rather eat out every meal so it is a constant challenge to keep all of us at home eating something we like. I tend to love going out to eat, but in my mind I tell myself that if I can just make good food at home we will eat at home more. It usually is rather a sad affair; because I burn food or the children just don’t like what has been cooked. My husband is rather wonderful he eats whatever I make without question. So, here is tonight being a successful dinner. Wish me luck! Here is my list of 30 foods.

My four year old asked my baby, “are you cute?” and she replies, “uh, huh” Everyone is constantly telling her she is cute so she knows it.
Things have changed for me and so I need to adjust my goals. I was going to sell baked goods at the farmers market to give my children some experience with work however, I am just not going to keep that as a goal. My children have other needs that have come to my attention and so now I will volunteering in their classes at school. I will try to make a new bakery recipe each week but that may not happen as I don’t know how much time volunteering is going to take. Saturday, I made a carrot cake and it was so good. We did not even bother to put the icing on it because it tasted so good without any. Yesterday, we missed the cake decorating class because I just could not keep up with all the families activities. I need to make dinner for the family tonight. I try to make sure we have dinner together every night. It seems to be the time I enjoy most and now while the children are small they don’t seem to mind. I’m sure when they are older they may protest but I just need that time as a family. We did work in the garden for family home evening. The children like to help weed. I think they also like it when they start saying “I’m tired” I say, “oh, you should take a break and go play” It gives me a much needed break and them too!
